Recipe for Peanut Butter Cookies

Ingredients:

  • 1 cup shortening
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1/4 cup 2% milk
  • 2 teaspoons vanilla extract
  • 3-1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup Nutella

Frosting:

  • 1/4 cup butter, softened
  • 1/4 cup shortening
  • 1/4 cup peanut butter
  • 4 cups confectioners’ sugar
  • 1/4 cup 2% milk
  • 1 teaspoon vanilla extract
  • Dash of salt

Icing:

  • 1/2 cup semisweet chocolate chips, melted
  • 2 tablespoons 2% milk

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, cream the shortening, peanut butter, and both sugars until light and fluffy, about 4 minutes.
  3. Add the eggs one at a time, beating well after each addition.
  4. Beat in the milk and vanilla extract.
  5. In a separate bowl, combine the flour, baking soda, and salt. Gradually add this to the creamed mixture and mix well.
  6. Shape the dough into 1-inch balls and place them 2 inches apart on ungreased baking sheets.
  7. Bake in the preheated oven for 10-12 minutes or until golden brown. Remove from the oven and place on wire racks to cool.
  8. To make the frosting, in a new large bowl, cream together the butter, shortening, peanut butter, and confectioners’ sugar until light and fluffy.
  9. Beat in the milk, vanilla, and a dash of salt until smooth. Frost the cooled cookies.
  10. For the icing, combine the melted chocolate with milk and drizzle over the frosted cookies. Add a dollop of Nutella on top of each cookie.
  11. Allow the icing to set before serving.
